Even though I love breakfast food, finding time on busy mornings to make a nourishing meal can be tough! Between getting the kids through their morning routine and getting ready for a full day of work, I barely have time drink my cup of coffee, let alone prepare an elaborate breakfast.
So on hectic mornings, I rely on quick, easy to make breakfasts (bonus points if they can be prepped ahead of time!) that give me all the necessary nutrients I need to make it through to lunchtime.
Today I am sharing my 3 go-to breakfast recipes with all of you! Hopefully you find a new easy, healthy option to start your day.
Quick n’ Easy Breakfast Recipes

Perfect Scrambled Eggs

- Prep Time: 2 mins
- Cook Time: 3 mins
- Total Time: 5 minutes
- Yield: 1 serving 1x

Ingredients
2 eggs
1 spray olive oil
salt
pepper
Instructions
In a small bowl, beat eggs. In a nonstick skillet on low heat, spray olive oil. Add eggs and cook, stirring, until large, fluffy curds form and eggs are fully cooked through, about 3 minutes. Season with salt, pepper and serve.
Vanilla Apple Oatmeal

- Prep Time: 5 minutes
- Cook Time: 8 minutes
- Total Time: 13 minutes
- Yield: 2–4 servings 1x

Ingredients
4 cups water (or water and milk combination)
2 cups (old-fashioned) rolled oats
pinch of salt
1/2 tsp. pumpkin pie spice
1 tsp. vanilla extract
1/8 cup maple syrup (optional)
1 apple grated
Instructions
In a pot over medium heat bring water to a boil with salt, spices and vanilla.
Add oats and grated apple and lower the heat. Cook for 5-8 minutes, stirring often, until the oatmeal is creamy and tender. Stir in maple syrup, if using.
Serve immediately with toppings.
I love sliced bananas, hemp seeds and bee pollen.
Kale and Mango Smoothie

Ingredients
1 cup frozen mango
1 cup chopped kale
Half a banana
Half a cup frozen cauliflower rice
1 teaspoon flax meal
1 teaspoon hemp seeds
One pinch of bee pollen
1 cup unsweetened coconut milk
1 tsp vanilla extract
Instructions
Blend everything well until creamy!
