Banana, Date, and Vanilla Oat Pudding

An easy to make, healthy breakfast that your entire family will love. This Banana, Date, and Vanilla Oat Pudding is vegan, gluten-free, and has no added sugar. Full of fiber and nutrients to keep you going till lunch!

With school starting soon, quick breakfasts for easy morning routines are going to be a must.

Whether your kids are going back to school or learning remotely, it’s so key to get back into a good morning routine and that includes starting the day with a healthy breakfast. Preferably one that’s super easy to make and customizable based on your kids’ different tastes and preferences!

This is where my Banana, Date, and Vanilla Oat Pudding comes in.

It’s the Wannabee Chef take on overnight oats. 100% plant-based, gluten-free, and no sugar added. Plus it’s kid-approved which is always important to me with 3 kiddos in the house.

The recipe below serves 1, but I like quadrupling the recipe so I can feed all the kids and myself at once!

Banana, Date, and Vanilla Oat Pudding

Ingredients

1 banana
3 dates, chopped
1 tsp. pumpkin pie spice
1/2 tsp. vanilla extract
1 cup unsweetened nut or coconut milk
1/2 cup rolled oats
Toppings of your choice (I used chopped berries, sprinkle of hemp and flax seed)

Instructions

In bowl mash, banana with spices and vanilla. After mashing, add milk and mix. Then add dates and oats and mix well.
Place mixture in a covered bowl overnight and top with desired topping.

Some of my favorite toppings include:

  • cacao nibs
  • sliced berries
  • raw nuts and seeds (hemp, chia, sliced almonds, crushed walnuts, chopped pecans)
  • dark chocolate chips
  • unsweetened coconut
  • nut butter
  • more sliced bananas
  • granola
  • cereal

My kids (and I!) love this overnight oat pudding and it’s even easy to take on the go by making it in a mason jar!
