This easy Shrimp Bruschetta will be a HIT at your next dinner party, potluck, or family gathering.
It comes together in less than 15 minutes and can easily be made gluten-free by swapping in a gluten-free bread for a traditional baguette.

1 cup grape tomatoes, quartered
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
2 cloves garlic, halved
½ cup Vidalia white onions, finely chopped
1 cup poached shrimp, chopped
1/4 cup basil leaves, thinly sliced
Splash of lemon juice
1 baguette, sliced
Slice baguette into ½ inch slices. Drizzle bread lightly with olive oil. Preheat cast iron skillet. Place bread to toast well on both sides and remove from pan to cool.
Combine all ingredients except for bread. Marinate for 10 minutes.
Place tomato mixture on grilled crostini; serve.
