Easy Steelhead Tacos with Avocado Mango Salsa
Delicious tacos made with fresh Steelhead trout and paired with Avocado Mango Salsa! Gluten-free and full of healthy ingredients.
I recently had the pleasure of working with NY Steelhead on some awesome recipes featuring….Steelhead trout, of course!
If you haven’t had Steelhead trout, you’re missing out.
Steelhead trout tastes very similar to salmon in the fact that it is not excessively fishy and it also has very similar texture to salmon as well. It’s nutrition is close to salmon’s as well but because it lives in saltwater it has more amino acids than salmon.
Overall, if you’re a fan of salmon, you’ll LOVE Steelhead.
Today I am sharing my GO-TO summer recipe using Steelhead trout and it’s JUST in time for Taco Tuesday. These will be your new favorite fish tacos for sure!
Easy Steelhead Tacos with Avocado Mango Salsa
- Prep Time: 20 minutes
- Cook Time: 15 minutes
- Total Time: 35 minutes
- Yield: 2 servings 1x
Ingredients
2 (6 oz Steelhead fillets), skinned
1 tbsp. lime juice
1/4 tsp. salt
4 corn tortillas
Salsa:
1/4 c. mango, small dice
1/4 c. avocado, small dice
1 tbsp. red onion, minced
1 tbsp. cilantro, minced
1 tsp. lime juice
1/4 tsp. salt
1/8 tsp. black pepper
Cabbage Slaw:
1 cup store bought coleslaw mix
1 tbs. mayonnaise
1 tsp. cilantro
1/4 tsp. salt
Instructions
Preheat the oven to 375 F. Wrap the steelhead in foil loosely. Once the oven has come up to temperature, bake the fish for 15 minutes.
In a bowl, mix all slaw ingredients together. Keep aside. In a separate bowl, mix all salsa ingredients together.
To assemble tacos:
Unwrap salmon and place in a shallow bowl. Flake fish with a fork. Then, warm corn tortillas in the microwave for 30 seconds. Place 2-3 tablespoons of fish in tortilla, top with a 1 tablespoon of slaw and garnish with 1 tablespoon of salsa. Repeat process until you have made 3 more tacos.
These Steelhead tacos are gluten-free and dairy-free….plus they’re delicious. The salsa and slaw can be made a day ahead to make them more flavorful upon serving. Also, if mangoes are out of season when you make this, you can sub in: tomatoes, strawberries, or even peaches!
Definitely let me know if you try this recipe and enjoy Taco Tuesday or whatever night is taco night in your home. ?
