Not all kids like seafood….but most like foods that are in the shape of tenders, nuggets, sticks, and fingers!

Seafood is SO good for your kids (lots of lean protein, healthy fats, and brain boosting nutrients!), but it can be tough to get them enthusiastic about digging into a fillet of salmon or a tuna salad sandwich. What I’ve found works when introducing my kids to new or unusual foods, is to make it in a way that’s already familiar to them.

Take these Lemony Steelhead Tenders, for example. My kids would not readily eat a meal consisting of Steelhead trout.

BUT, by making them into tenders, which resemble fish sticks and/or chicken tenders that they’ve had before, they are willing to at least try the meal! Bonus points for them actually enjoying it.

These Lemony Steelhead Tenders are super easy to make, yet flavorful and satisfying. The prep is also very kid-friendly too! So you can have your little helpers assist with coating the fish pieces in the egg mixture and then the breadcrumbs. Kids are ALWAYS more likely to eat something they’ve had a hand in making.

Lemony Steelhead Tenders

Ingredients

2 each (6 oz Steelhead, filet), skinned and cut into 5 x 2 inch “tender” pieces

2 eggs

1 tsp. Dijon mustard

1 cup panko breadcrumbs

1 tsp. lemon zest

Cooking spray

1/8 tsp. salt

1/8 tsp. pepper

Lemon juice to taste

Instructions

Combine bread crumbs, salt, pepper and lemon zest, in a plate. In a separate plate, combine egg and mustard.  Dip each tender in the egg mixture and then into the bread crumb mixture. Set coated tenders aside on a plate.

Spray tenders with olive oil cooking spray and place on a parchment lined baking sheet. Bake for 12 minutes at 375 F flipping once.

You can easily make these gluten-free by using GF panko breadcrumbs.
