Sesame Cauliflower [vegan + gluten-free]

The recipe is a fun, meatless spin on classic takeout Sesame Chicken, but made fully plant-based by using cauliflower.

Vegan Gluten-Free Sesame Cauliflower

Ingredients

2 tsp. olive oil
2 shallots, sliced
1 tbsp. grated ginger
2 medium tomatoes, diced
1/2 head cauliflower florets
3/4 cup water
Salt to taste

Slurry:
2 tbsp. cornstarch
1 tbsp. vegan chicken broth base (Orrington Farms)
2 tbsp. sesame seeds
1 tbsp. gluten-free soy sauce
1 tbsp. rice vinegar
1 tbsp. cooking wine
2 tbsp. brown sugar

Garnish:
1 tbsp. sesame oil
2 scallions, sliced
1 green chili, sliced (optional)
1/2 tbsp. lemon/orange zest

Instructions

In a wok, heat the olive oil and sauté the shallots. When shallots are translucent add ginger, tomatoes and salt. Allow to cook for for 5 minutes covered on medium heat till tomatoes soften. Add 1/4 cup water. Add cauliflower and stir fry with tomatoes for 3 minutes on high heat. Add another 1/2 cup water and allow to come to a boil covered. Now add the well whisked slurry to the boiling liquid in wok and keep stirring till a thick sauce forms. When the cauliflower is ready, garnish with chili, scallions, sesame oil and lemon/ orange zest. Serve hot with rice.
