Strawberry Avocado Toast

A sweet and savory twist on classic avo toast! This Strawberry Avocado Toast is the perfect way to start your day.

Yesterday, my family and I went strawberry picking at Farms View Roadstand in Wayne, New Jersey.  The kids had a blast going up and down the rows,  and we ended up collecting about five pounds of strawberries!  We started dreaming about all the possible uses from pies to jams to smoothies.

We dropped the kids off at my parents’ house for the night (first date night in a looooong time!).  The next morning, with the kids still at my parents’ house, my husband and I finally settled on making strawberry avocado toast.  Why spend 10 dollars or more for an avocado toast at a trendy brunch spot when you can make your own custom version?  The combination of strawberries and avocado might sound a bit unexpected, but they actually pair really well together.

Strawberry Avocado Toast

Ingredients

1 slice of Ezekiel flourless bread (sourdough also works well)

4 thinly sliced strawberries

1/2 avocado

1 sliced heirloom tomato

Crumbled goat cheese

Extra virgin olive oil (from my ten year anniversary trip to Italy)

Pinch of salt

Crushed red pepper

Instructions

First, I cut the avocado using the technique I demonstrate in this video recipe for mango guacamole (skip ahead to the 1:05 mark if you don’t want to watch the whole thing).  I then mashed the scooped avocado with a fork.  It’s really important to add some salt and pepper to the mash at this stage.

By the way, for a perfectly ripe avocado, you want it to be soft to the touch, not firm or mushy.  Ripe avocados have darker green skin and the navel falls off easily.  Fortunately, some grocery stores have also started adding stickers to avocados to indicate when they’re ripe.

After spreading the creamy avocado on a piece of toast, I piled on the sliced tomato and strawberries and the crumbled goat cheese (in that order) and then finished with the olive oil, crushed red pepper and salt.  Just a note, you could also substitute peaches or mangoes for the strawberries.

I enjoyed a boiled egg along with the avocado toast.

It was nice for a change to make something for my husband and me without regard to whether the kids would like it.  I remarked to him how long it’s been since we’d actually gotten a chance to leisurely eat breakfast together at home!  It was now time to pick up the kids from my parents.  My house would not be quiet for much longer.  We were ready.
